College Brownies
I created this recipe in college when I had only a few measuring utensils.
1 cup Cocoa Powder
1 cup sugar
1 cup flour
1 cup vegetable oil
4 large eggs
Mix all
Bake at 350 degrees for about 20 minutes.

Chocolate Torte
1 1/4 cup butter
3/4 cup Cocoa Powder
4 eggs
1/4 tsp salt
1 tsp vanilla
2 cup sugar
1 cup flour
1 cup nuts.
Oven 350°. 2 round pans 9x1.5 in. waxed papered, buttered.
Melt butter, stir in cocoa.
Beat eggs, add salt, vanilla, sugar; beat well.
Add chocolate mix, fold in flour then nuts.
20-25 minutes.

Chocolate Souffle
Bittersweet Chocolate
6 tablespoons butter
2 tablespoons water
6 yolks
6 egg whites
.25 tsp Cream of Tarter
1/2 cup Sugar Butter and sugar six 11-oz ramkins.
Melt chocolate, butter, water in double boiler. Cool for ten minutes and add eggs.
Beat whites til foamy and add Cream of Tarter. Beat to soft peaks and add sugar then beat to stiff peaks.
Mix one-third whites into chocolate then fold in the rest. Divide equally into ramkins and bake at 375 for 20 minutes.

McCranberry Pie
2 packages Cranberries
12 oz chocolate chips
3/4 cup sugar
Graham Cracker crust
Toasted slivered almonds
Put one package of cranberries in microwave safe bowl and cover with 1/2 cup sugar. Stir and cook for 3-4 minutes in microwave until the berries just begin to pop. Add rest of berries and sugar. Cook for 4 more minutes until the new berries are thawed and warm.
Sprinkle one layer of chocolate chips into the crust, cover with a layer of warm mixture. Add another layer of chips and another layer of mixture. Finish with the remaining chips and mixture. Generously cover with almonds. Put in refridgerator for an hour.

Chocolate Orbit Cake
0.5 pound butter
12 oz chocolate
6 eggs
1 cup sugar
9x2 pan lined with parchment.
Melt chocolate and butter in a double boiler. whisk eggs and sugar in separate bowl then combine. Bake at 350 for 1 hr 15 min in a bain marie until cake seems to have set and finger touched to center comes away clean

Molten Chocolate Cake
14 oz chopped bittersweet chocolate
1.25 cups unsalted butter
2 tsp ground coriander
2 tsp ground cardomom
1 tsp cinnamon
0.5 tsp ground cloves
0.5 tsp ground white pepper
6 large eggs
6 large egg yolks
2 tsp vanilla
3 cups powdered sugar
1 cup flour
Butter eight 3/4 cup souffle dishes. Melt chocolate in a double boiler with the spices and butter until smooth. Let cool slightly.
Whisk eggs, yolks and vanilla. Add sugar, then chocolate, then flour.
Divide into ramekins evenly. The batter can be refridgerated for one day.
Bake at 425 for 15 to 18 minutes until top edges are dark brown, but keep centers soft and runny. Loosen from edges with knife and let sit for 5 minutes. Turn out onto plates and dust with some powdered sugar. Can be topped with crystalized ginger strips and served with Ginger Ice Cream.

Amazon Cake
1.5 cups flour
0.3 cup cocoa
1 tsp baking soda
1 cup sugar
0.5 tsp salt

1 cup water
5 tblspn corn oil
1.5 tsp vanilla
1 tablespoon cidr vinegar
9-inch greased pan
Flour, cocoa, baking soda, sugar and salt mixed in one bowl. Oil, vanilla vinegar and 1 cup water in another. Mix together until free of lumps. Bake 30-35 minutes at 350 until top springs back when gently pressed.
Variation: Use 1 cup Orange Juice plus some zest instead of the water and vinegar.

Tollhouse Cookies
2-1/4 cups flour
1 tsp. salt
1 tsp. baking soda
3/4 cup brown sugar firmly packed
3/4 cup granulated sugar
1 cup softened butter/oleo
1 tsp. vanilla extract
2 eggs
2 cups choco chips
1 cup chopped nuts (optional)
Combine flour, salt, and soda in bowl and set aside.
Combine sugar, butter, vanilla and beat until creamy. Add eggs and beat.
Add dry ingredients and mix well. Stir in choco chips and nuts.
Rounded teaspoons onto greased cookie sheet.
Bake 8-10 minutes at 375. Makes approx. 100 2" cookies.

Egg Nog
1 dz eggs, separated
1 cup sugar
1 qt milk
1 qt cream
Mix yolks with sugar and milk
Whip whites and cream, fold in.

Lemon Chocolate Cake
Lemon Cake Mix
2 Lemons
Chocolate bits
Frosting
Mix Lemon cake according to recipies except substitute lemon juice for equivalent amount of liquid.
Add lemon zest to mix.
Add chocolate chunks and mix well
Cook according to directions, frost when cool.

Apple Puff Pancakes
5 medium apples
1/2 cup water
4 Tablespoons butter
1/2 teasponn cinnamon
1/2 cup mincemeat (apples & walnuts & spices)
1 cup flour
1 cup milk
6 eggs
2 teaspoons vanilla

4 tablespoons butter cut into 8 pats
Peel, core and chunk apples. Cook in frying pan with water and butter about 10 minutes until softened. Add cinnomon and mincemeat.
Blend flour, milk, eggs and vanilla.
Put one pat of butter into each of 8 souffle dishes. Put in preheated oven (400 degrees).
Ladle 1/3 cup batter into each dish when butter is hot.
bake 10 minutes at 425 then 5 minutes at 400.
Spoon apples into the center and serve warm.
